Sunday afternoon I had a holiday open house to celebrate the season with my nearest and dearest friends in the DC area. While I did serve some healthy dishes such as clementine oranges, veggies and hummus and a couple of Weight Watchers baked goods, the majority of what I served was yummy party food and seasonal baked goods.
The most popular sweet I made also happened to be the quickest, easiest dish of everything I prepared this weekend. Several people asked for the recipe, and I thought I would share it with everyone here as it may help your time management over the holidays.
Double Decker Fudge
Ingredients:
1 cup Reese’s peanut butter chips
1 (14 oz.) can sweetened condensed milk
1 tsp. vanilla
1 cup chocolate chips
Line an 8-inch square pan with foil. Mix the peanut butter chips and 2/3 cup of sweetened condensed milk and microwave on high for 1 to 1 1/2 minutes. Stir after 1 minute. After melted, stir in half the vanilla. Spread out the mixture in botton of the pan. Repeat the same process with the chocolate chips. Spread that on the peanut butter mixture. Chill in the refrigerator.
The last step – chilling – is pretty important. You have to get it cold so that it hardens enough to feel like fudge. I often double this recipe, as I did yesterday, and make it in a 13 X 9 pan. I’ve also mixed in extra peanut butter (NEVER the natural kind – always the jif, skippy, etc. kind with extra sweeteners added) in the peanut butter chips and milk mixture, but it’s not necessary. This fudge is always a hit and couldn’t be easier. Enjoy!

My easiest recipe is Stuffed Mushrooms – I developed it years ago during a lean Christmas to make the meal stretch further!
1 doz med/lge chestnut mushrooms (make sure they have good stalks)
3 or 4 heaped tbsp Philadelphia Cream Cheese (the light or low fat version) – depends on how creamy you like the mix
1 tbsp chopped parsley (optional)
1 tbsp chopped chives (optional)
1 tbsp butter
a. carefully remove stalks from the mushrooms and chop finely. set the mushroom caps aside on a baking tray.
b. in a small saucepan melt the butter and lightly cook the chopped mushrooms stalks.
c. add in the cream cheese and mix to make a thick, creamy sauce.
d. add the chopped chives and parsley.
e. take off the heat and let cook slightly.
f. spoon mix into the mushroom caps
g. pop in the oven and cook.
Extra tips – you can also add chopped garlic at the stage where you cook the chopped stalks.
Also, I often brush the mushroom caps with melted butter before putting them in the oven – they seem to cook better if they’re larger mushrooms.
If you like garnishes – sprinkle with chopped parsley or chili powder.
How clever to stuff the mushrooms with the mushroom stalks! Looks good!
Ah, easy recipes. I live by them. I’m fond of sausage balls:
3 cups Bisquick
1 lb grated cheese (or about 1/2 a 2 cup bag of shredded)
1 lb of sausage (I prefer Jimmy Dean–hot)
Lay sausage out for an hour. Mix Bisquick and cheese together. Knead in softened sausage. Roll into balls. Bake in a preheated 350 degree oven for 20 minutes.
Other notes: the original recipe says to wet your hands first before kneading and making balls. I don’t do that. I do, however, put the balls into freezer ziploc bags and put the sausage balls in the freezer. You can take them out, break them apart and cook in a preheated oven for 30 minutes if you do it that way. They do better from the fridge, though.
This looks good too. One of my colleagues is a big fan of Bisquick. I ran to tell her this recipe, and she makes it too! Said it was really yummy.

Hope you had a great time at your party, Michelle. We had our annual holiday party for the local RWA chapter on Saturday, complete with our Dirty Santa book exchange which is always a riot.
