Summer Kale

The very first Saturday vegetable blog I did was about Kale and it remains my favorite of all the healthy new foods I’ve discovered.  A few weeks ago, I was having lunch out with a friend and the waiter recommended the Kale Caesar Salad. He said it’s very popular.

We chose the watermelon feta salad instead, but I’ve been thinking of that Kale Caesar Salad ever since so I decided to dedicate today’s blog to summer Kale recipes.

This first one is a salad I found because she mentioned the Kale Salad at Whole Foods. This is her adaptation of it to make at home.

If you happen to have a Whole Foods near you, look for this highly recommended Kale Salad from Lydia’s Organics.

 

The Food Trust brings us this wonderful recipe for Kale Caesar Salad.

 

I absolutely love this recipe for Kale and Red Cabbage Salad. She makes it look so easy!

Here’s another variation that teaches you how to make your own croutons. I’m not a fan of anchovies but the rest sounds delicious. Chad Robertson’s recipe for Kale Caesar Salad.

One thing you might have noticed if you’ve clicked on the links and read the recipes is that because kale is such a strong leaf, you can make and dress these salads well in advance. That’s a bonus anytime, but especially in summer.

  1. I am a huge fan of kale as well – a lovely perk from this healthy living lifestyle I’ve been on a few years now. I think I prefer winter kale, but I should go check out some fresh, summer kale and test that out.

    Hi Michelle,

    I definitely prefer the taste of winter kale; it has a sweetness to it. Since I’m not really into soups and stews in 100 degree weather, the salad definitely appealed to me.

  3. Since I’ve been really upping my vegetable intake, I’m going to try one of these kale Caesar salads soon. Just made my big run to the store yesterday, so I’ll catch the kale next time.
